The quality of the beans shines through giving a full flavour without any over-powering bitterness. If you believe the cocoa content is the way to judge chocolate then please think again. It's a bit like judging wine by alcohol content; it lacks an understanding that the variety of bean, climate, soil, weather, skill and about 5 zillion other things have a more significant effect on our chocolate.
